Our Approach
Sustainability, local produce & a taste of Australia.
We’re committed to a more sustainable way of doing things, sourcing many of our core ingredients directly from small, independent local businesses. From beef raised on our own farm to freshly baked sourdough, free-range eggs, and dairy milk on tap, everything we serve and sell in our farm shop is carefully chosen to support local producers and reduce our environmental footprint. We’re also passionate about bringing the best of Aussie brunch culture to the English countryside. Our simple, seasonal, sustainable menu celebrates fresh, vibrant flavours perfectly paired with the stunning surroundings of Wiltshire.
Speciality Coffee
At The Stalls, coffee is personal. We’re independent, detail-driven, and uncompromising when it comes to quality; and that shows in every cup we serve.
We work closely with The Roasting Party in Winchester, whose Australian roots and forward-thinking approach to coffee align perfectly with our own. With a strong focus on sustainability, environmental responsibility, and innovation within specialty coffee, they share our belief that great coffee should be both exceptional to drink and responsibly sourced. Our coffee is delivered in large reusable tubs to help reduce packaging waste and unnecessary single-use materials.
Together, we’ve chosen coffees that reflect the style we love to serve; balanced, expressive, and approachable, with quality and consistency at the centre of every cup.
Our milk comes from Nunton Dairy, a local independent family-run dairy near Salisbury, delivered in stainless steel kegs and poured fresh on tap, removing single-use plastic from our milk supply.
With highly trained baristas and carefully developed recipes influenced by Australian coffee culture, our focus is on balance, texture, and consistency. The result is coffee that’s silky smooth, beautifully judged, and made properly every single time.
